# Five Young Startups Rethinking the Ingredients in Our Food

Some food startups are trying to change more than what goes on the plate. They’re working on the ingredients behind familiar products: egg whites, cheese, fats and protein. Here are five younger companies taking different routes into that work. Their products and commercial availability vary, so treat this as a snapshot of the companies’ approaches rather than a shopping list.

## Five companies to watch

- **Onego Bio** makes ovalbumin, the main protein in egg white, using precision fermentation. The Finnish company, founded in 2022, is pursuing an ingredient that could give food makers some of the functional properties of conventional egg whites without relying on laying hens.
- **Savor** is developing fats through a thermochemical process using basic inputs such as carbon, hydrogen and oxygen. The startup’s approach is unusual in a category usually associated with crops or animal products; it has presented butter as one possible application.
- **Planetary** uses fermentation to make protein ingredients, including by working with feedstocks from food-industry side streams. The Swiss company is focused on producing ingredients for food manufacturers, rather than building a consumer brand around a single finished product.
- **New Culture** is working on mozzarella made with animal-free casein produced through precision fermentation. Casein is a key dairy protein, and the company is targeting the stretch and melt that make mozzarella difficult to replicate with many plant-based alternatives.
- **MicroHarvest** grows microorganisms through fermentation to produce protein ingredients. Based in Germany, it has explored applications in food and animal nutrition, where manufacturers are looking for alternatives to conventional protein sources.

These companies aren’t all solving the same problem. Onego Bio and New Culture are aiming to reproduce specific animal-derived proteins; Savor is exploring a different way to make fats; Planetary and MicroHarvest are building around fermentation-based protein. That distinction matters: a promising ingredient still has to meet food-safety rules, work in real recipes, scale reliably and make economic sense.

For now, the interesting question is less which startup will replace an entire food category and more which ingredients can earn a practical place in products people already know. That’s where these approaches will face their clearest test.
